The Seattle Times Reports ‘Paseo To Reopen’

According to a piece in The Seattle Times for December 12, 2014, written by Bethany Jean Clement, Paseo Carribean Restaurant in Upper Fremont will reopen, and soon.

Read the full article on-line on The Seattle Times Blog.  According to Clement’s piece, Ryan Santwire – an investor in Rockcreek Seafood & Spirits – bought Paseo at an auction, as part of the bankruptcy settlement for the restaurant.  While the former owner, Lorenzo Lorenzo, has objected to giving away the secret recipe for his wildly popular Cuban sandwiches, Santwire and former Paseo cooks spent a day painstakingly recreating the recipe in the Rockcreek kitchen.

Santwire, a Ballard resident, has promised to reopen the Fremont storefront soon, with the same employees, suppliers and everything else identical to the way fans remember it.  According to The Seattle Times, Santwire plans zero changes – besides cancelling the annual winter hiatus the shop used to take every year.
